We take the health and safety of all our customers very seriously. From our cutting rooms to our coolers, we meticulously clean all surfaces and sanitize to meet and exceed all state and county health codes. Our cutting boards, knives, grinders, and saws are broken down, cleaned and sanitized between each animal and at the end of the day when the entire shop is cleaned and sanitized.
Our smoke house, cure box, and drying racks are all cleaned after use, scrubbed and sanitized. We use a seperate scullery for all equipment and dishware cleaning, utilizing a triple-sink and quaternary ammonium disinfectant. We use electronic and computerized controls for our aging cooler, curing box, and smoke house, which controls the humidity, air flow, and temperatures. When processing smoked or cured products, we maintain the strictest controls to ensure the quality and safety of our products.
We use waxed paper to maintain the quality of your product even while frozen. When we use our Cryovac, vacuum sealer, we keep strict and up to date HAACP logs to ensure the safety of your packages. Safety is our number one priority.
