At North American Game Company, we hand craft and hard smoke our own bacon using only the finest ingredients. We have both a wet cured and a dry cured bacon, smoked over your choice of hickory, cherry, or applewood chips. Along with the smoke, choose from savory, peppered, garlic, or spicy flavoring, for your preferred taste.
Bacon is traditionally made from the side of the animal, the muscle and fat covering the ribs to the belly of the animal which is the most common and best known bacon. However, bacon is also made from the shoulder, neck, and loin of the animal, each with its own flavors and unique history. From traditional Canadian and Irish bacon from the loin, coppa and cappacola, panchetta, to traditonal belly, we make it all!
